I’ve been searching for my own vegan nut bar recipe for a while now and finally decided just to wing it and try to create one myself! The reason I’ve wanted to make these is because nuts are powerhouses and are packed with nutrition and goodness. They are packed with protein, fibre and essential fats. In this recipe I chose to use almonds and peanuts.
Almonds are calcium-rich so if you’re steering away from milk, these are perfect. They also contain vitamin E which improves the appearance of your skin. Peanuts keep you satisfied for a longer time and can also increase your metabolic rate.
These bars are SO easy to make all you need is:
-1 Cup of Peanut Butter
-1/4 Almond Butter
-1/2 Cup of Raisins
-1 tsp of Flaxseed
-1 tsp of Cocoa Powder
-1 Cup of Oats
-1/2 Cup of Halved Almonds
And it’s that simple. Five ingredients are all you need as a base but if you want to add to them you could put in the cocoa powder and flaxseed.
To start with you need to blend the raisins but don’t put them into the bowl. Then put both the butters into a bowl and add the oats.
Then add the flaxseed and cocoa powder and stir the mixture together. It should be slightly dry of which you then need to add the raisins to it.
Lastly, cut the almonds in half and scatter them over the bottom of a container. After, tip in the mixture and spread it out across the container and leave in the fridge for 10 minutes. Cut them up into squares or rectangles and eat!
