A delicious, fruity and easy summer treat!
-30g Unsalted Butter
-10 digestive biscuits
-450ml Rhubarb Yoghurt
-240g White Chocolate
-Handful of strawberries
Melt the butter in a pan. Next, crush the biscuits and then add them into the pan and mix together. Tip the biscuit mix into a cake tin or loaf tin and flatten.
Melt the chocolate until smooth and then add in the yoghurt and stir until thoroughly mixed in. Next split the mixture in two and pour one half straight on top of the biscuit layer.
With the second half cut up the strawberries and mix them into the yoghurt and chocolate. Then crush them using a fork so the mixture goes a slight pinky colour. Then spoon the mixture on top of the second layer and leave to set in the freezer for a couple of hours or over night.
